What are MIPs? The Kitchen at The Pass Berkshires
When we say we’re a vertically integrated cannabis company, that means we do more than just grow the cannabis flower we sell — we make it into all The Pass products you see on our menu as well, including our wildly popular edibles. Our edibles have been one of our most coveted products with our customers since our genesis. We’re biased, but we believe that there is a lot that sets us apart from the competition, and that certainly includes our MIPs (Marijuana Infused Products) department and all that comes out of it.
Our Pass Kitchen
We understood that our gummies are a crowd favorite, so our kitchen was specifically designed to run efficiently as a cannabis facility, optimized to produce our cannabis products. We are lucky enough to have a super spacious full kitchen in our facilities so that our MIPs team has all the space and opportunity to churn out our gummies.
The biggest factor in this is that our kitchen is temperature and humidity controlled, which as you know if you’ve worked in a kitchen before, is a very unique circumstance. This temperature and humidity control allows our gummies to set faster, increasing our efficiency. To accommodate the ideal conditions and help our MIPs team succeed, we are stocked full of specialized cannabis equipment that allows efficient and consistent production. All in all, our kitchen is an incredible playground for our chef and MIPs team to R&D new products while they help us stay stocked up with our popular gummies.
Because making gummies is more than just pouring a mixture into molds, we also have 2 curing rooms right off our large kitchen in which we sugar and store all of our gummies. The large trays of gummy molds are brought into this room where they are individually popped and manicured, then tossed with organic sugar in a hypnotizing manner.
In addition to all the gummies that our team produces week after week, our MIPs team also produces our partner Green Revolution’s proprietary tinctures and shots. This means in order to keep up with their standards of nano cannabinoid products that hit much faster compared to other edibles, we have to have a nano emulsion machine. This fancy machine allows us to make the cannabinoids inside the tinctures and shots much smaller so they are absorbed by your body quicker.
Perhaps the biggest change in our kitchen is our newest MIP manager Chef James. James is a chef through and through. Graduating from the Culinary Institute of America and subsequently working in many restaurants throughout his career, James has dedicated his life to the kitchen. The major difference in our kitchen that appealed to James most was the change of pace. The typical in-kitchen experience for James up to this point is run-and-gun deep into the night until the lights go out. Now, he is able to remedy some of that kitchen burnout with regular hours, a rather quiet kitchen, and a cool and level-headed sum of coworkers.
At the same time, James pulls from his wealth of experience in past kitchens and is always determined to be cooking, and if he’s not cooking because he has stocked our shelves fully with gummies, he’s doing research and development on products he hopes to make or improve.
Gummies at The Pass
We’ve had several different edibles come out of our kitchen, but the one that really stuck is our line of Pass Gummies. In fact, our best-selling Knockout gummies and Sun-Up gummies are our longest running products at our store. While those have stood the test of time, we have introduced both limited-time batches of flavors like Watermelon Mojito, Cinnamon Apple, Sugarplum Champagne, and more, as well as other lines of gummies that are here to stay, like our premium hash rosin flavors. Each gummy we currently produce are coated in a dusting of organic sugar and feature 5mg of THC, which is the legal limit allowed for a single serving edible in the state of Massachusetts.
Knockout Gummies
A large amount of our customer base comes to us looking for products that are going to aid their sleep habits. Thus Knockout Gummies have reigned supreme in the edibles hierarchy at our store. Encased in a fruit punch flavored square resides 5mg of THC and 2mg of melatonin to help our customers slide into a restful night’s sleep.
Sun-Up Gummies
Sun-Up Gummies allow us to serve our customers who are looking for a little energy boost on the days they need it the most. This counterpart to our Knockouts feature a bright and tangy strawberry lemonade flavor to accompany 5mg of THC and an infusion of Vitamin C and D to mimic the restorative powers of the sun.
Hash Rosin Gummies
One of our proudest developments in our edibles offerings is our lineup of premium hash rosin gummies. Hash rosin is a solventless cannabis concentrate extracted through heat and pressure. This allows it to retain most of the original plant’s cannabinoids, leading to a more well-rounded high due to something called the entourage effect. Our lineup of hash rosin gummies still feature 5mg of THC, but customers have reported a more intriguing and effects-based high. This line features lemon, blueberry, and cherry flavors.
The Current State of MIPs at The Pass
